    Curing the Bone Marrow

    In a bowl, combine the bourbon, kosher salt, black pepper, and fresh thyme. Place the bone marrow bones in a shallow dish and pour the bourbon mixture over them, ensuring they are fully submerged. Cover and refrigerate for 24-48 hours for curing.

    Roasting the Bone Marrow

    Preheat your oven to 450°F (230°C). Remove the bones from the refrigerator and rinse them under cold water to remove excess salt. Place the bones upright on a baking sheet and roast in the oven for 15-20 minutes, or until the marrow is bubbling and begins to separate from the bone.

    Serving

    Remove the bones from the oven and allow them to cool for a few minutes. Serve the roasted bone marrow with slices of French bread for spreading.
