Ribeye and Compound Butter

Method

Preparation and Cooking

  1. 1

    Prepare the Compound Butter

In a mixing bowl, combine softened unsalted butter, bone marrow, chopped parsley, minced garlic, chopped thyme, salt, and black pepper. Mix until well combined.

  2. 2

    Shape and Chill the Butter

Place the mixture onto a sheet of parchment paper and roll it into a log shape. Twist the ends of the parchment to seal. Refrigerate for at least 30 minutes until firm.

  3. 3

    Cook the Ribeye Steak

Preheat your grill or cast iron skillet over high heat. Season the ribeye steak generously with salt and black pepper on both sides.

  4. 4

    Grill or Sear the Steak

Place the steak on the grill or skillet and cook for about 4-6 minutes on each side for medium-rare, or until your desired doneness is reached. Use a meat thermometer to check the internal temperature (130°F for medium-rare).

  5. 5

    Rest the Steak

Once cooked, remove the ribeye steak from the heat and let it rest for 5-10 minutes to allow the juices to redistribute.

  6. 6

    Serve with Compound Butter

Slice the steak and serve topped with slices of the chilled bone marrow compound butter.
