    Prepare Caprese Skewers

    On a skewer, thread cherry tomatoes, basil leaves, and mozzarella balls. Repeat until all ingredients are used.

    Drizzle and Season

    Once skewers are assembled, drizzle balsamic glaze over them and sprinkle with salt and pepper to taste.

    Sauté Vegetables

    In a large pot, heat olive oil over medium heat. Add chopped onion and minced garlic, cooking until softened.

    Add Remaining Ingredients

    Add chopped carrots and celery, cook for another 5 minutes. Pour in vegetable broth, diced tomatoes, thyme, salt, and pepper. Bring to a boil.

    Simmer

    Reduce heat and let the soup simmer for 30 minutes, allowing the flavors to meld together.

Main Course

    Prepare Chicken

    Preheat oven to 375°F (190°C). Rub chicken breasts with olive oil, garlic powder, paprika, salt, and pepper.

    Place chicken in a baking dish and bake for 25-30 minutes or until the internal temperature reaches 165°F (75°C).

    Remove from oven and sprinkle fresh parsley over the chicken before serving.
