Roasted Chicken
Prepare the Chicken
Preheat your oven to 425°F (220°C). Rinse the whole chicken under cold water and pat it dry with paper towels.
Season the Chicken
In a small bowl, mix together olive oil, minced garlic, chopped rosemary, salt, and black pepper. Rub this mixture all over the chicken, including inside the cavity.
Roast the Chicken
Place the seasoned chicken on a roasting pan and roast in the preheated oven for about 1 hour and 15 minutes, or until the internal temperature reaches 165°F (75°C).
Japanese Sweet Potato
Prepare the Sweet Potatoes
While the chicken is roasting, prepare the Japanese sweet potatoes. Peel and cube them into bite-sized pieces.
Season and Roast
In a large bowl, toss the cubed sweet potatoes with olive oil, salt, and black pepper. Spread them out on a baking sheet and roast in the oven (you can do this alongside the chicken) for about 25-30 minutes or until tender and golden brown.

Add Feta
Once the sweet potatoes are roasted, remove them from the oven and sprinkle the crumbled feta cheese over the top while they are still warm.
Salsa Macha
Prepare the Salsa Macha
In a dry skillet over medium heat, toast the dried chiles for a few minutes until they become fragrant. Be careful not to burn them.
Blend the Salsa
In a blender, combine the toasted chiles, garlic cloves, vegetable oil, salt, and vinegar. Blend until smooth and adjust seasoning to taste.
