Prepare the Ingredients

Wash the cherry tomatoes and cut them in half. Finely chop the fresh cilantro and green onions, separating the white parts from the green parts.

Season the Steak

Rub the Wagyu flat iron steak with olive oil and season generously with salt and black pepper on both sides.

Sear the Steak

Heat a skillet over medium-high heat. Once hot, add the seasoned Wagyu flat iron steak and sear for about 4-5 minutes on each side for medium-rare, or longer to your desired doneness.

Prepare the Tomato Mixture

While the steak is cooking, in a bowl, combine the halved cherry tomatoes, fish sauce, chopped cilantro, and the white parts of the green onions. Toss gently to mix.

Rest the Steak

Once cooked to your liking, remove the steak from the skillet and let it rest on a cutting board for about 5 minutes.

Slice the Steak

After resting, slice the Wagyu flat iron steak against the grain into thin strips.

Serve

Arrange the sliced steak on a plate, top with the tomato mixture, and garnish with the green parts of the green onions and crispy shallots. Serve immediately.
