Preparation
1. Prepare the Duck
Preheat the oven to 180°C (350°F). Season the duck with salt, black pepper, and fresh thyme. Place in a roasting pan and drizzle with olive oil. Roast in the oven for about 1 hour, or until the skin is crispy and the internal temperature reaches 75°C (165°F).
2. Sauté the Vegetables
In a skillet over medium heat, add olive oil. Once hot, add sliced king mushrooms and cook for about 5 minutes until they are golden brown. Add broccolini and sauté for an additional 3-4 minutes until tender. Season with salt and pepper.
3. Make the Duck Jus
In a saucepan, combine the duck stock and any drippings from the roasting pan. Bring to a simmer and reduce by half until it thickens slightly. Adjust seasoning as needed.
Assembly
4. Plate the Dish
Once the duck is done roasting, let it rest for 10 minutes before slicing. Serve the sliced duck alongside the sautéed king mushrooms and broccolini. Drizzle the duck jus over the top.
