Prepare vegetables
Wash and halve the cherry tomatoes. Dice the eggplant into roughly 1/2-inch cubes after peeling in stripes if desired. Dice the red bell pepper and finely chop the onion. Mince the garlic. Pit and halve the Kalamata olives if not already pitted and sliced.
Brown eggplant
Heat 1 tablespoon olive oil in a large skillet over medium-high heat. Add diced eggplant in a single layer (work in batches if necessary) and cook, stirring occasionally, until golden and softened, about 6–8 minutes. Remove the eggplant to a bowl and set aside.
Sauté aromatics and pepper
Add another 1 tablespoon olive oil to the skillet and reduce heat to medium. Add the chopped onion and cook 3–4 minutes until translucent. Add the diced red bell pepper and continue to cook 4–5 minutes until softened. Stir in the minced garlic and cook 30–45 seconds until fragrant.
Build the sauce
Stir in the tomato paste and cook 1 minute to deepen flavor. Add the halved cherry tomatoes and cook 3–5 minutes until they begin to soften and release juices. Pour in the 2 tablespoons balsamic (or red wine vinegar + 1 tsp balsamic if using), add the sugar if using, and stir to incorporate.
Combine ingredients
Return the browned eggplant to the skillet. Add the drained white beans, halved Kalamata olives, and rinsed capers. Toss gently to combine and heat through for 2–3 minutes so flavors meld but beans keep some texture.
Finish seasoning
Remove from heat. Stir in the remaining 1 tablespoon olive oil, chopped parsley, sliced basil leaves, lemon zest if using, salt, and black pepper. Taste and adjust seasoning with additional salt, pepper, or a splash more vinegar if needed.
Cool and marry flavors
Allow the caponata to cool to room temperature (at least 20 minutes) so flavors develop. Caponata can be served slightly warm, at room temperature, or chilled — flavors improve after 1–2 hours in the fridge.
To Serve
Spoon the caponata onto toasted bread slices or into a serving bowl. Drizzle with a teaspoon of extra-virgin olive oil and garnish with an extra basil leaf or parsley sprig if desired. Serve as an appetizer, side, or light main.
