Cocktail

Blueberry syrup (makes about 6 oz)

Method

Blueberry syrup

Combine blueberries, sugar and water in a small saucepan over medium heat. Stir to dissolve sugar and bring to a gentle simmer.

Simmer 6–8 minutes, mashing berries occasionally with a spoon or fork to release juices. When mixture is thickened slightly and fragrant, remove from heat.

Stir in lemon zest, let cool 10 minutes, then strain through a fine-mesh sieve into a jar, pressing solids to extract syrup. Discard solids and refrigerate syrup until cold. Makes about 6 oz.

Cocktail assembly

Chill glass

Place a coupe or martini glass in the freezer or fill it with ice water to chill while you prepare the cocktail.

Add Brockmans gin, fresh lemon juice, blueberry syrup, dry vermouth and orange bitters into a cocktail shaker.

Fill the shaker with ice (about 6 cubes). Cap and shake vigorously for 12–15 seconds until the shaker is cold to the touch and the exterior frosts.

Remove ice or water from the chilled glass. Double-strain the cocktail into the chilled coupe or martini glass using both the shaker strainer and a fine sieve to remove tiny ice chips and any pulp.

Garnish with three fresh blueberries speared on a pick and a twist of lemon peel expressed over the top and dropped into the glass.

Serve immediately.
