Making the Tortellini

Prepare the Pasta Dough
In a large bowl, combine flour and salt. Make a well in the center, add eggs and olive oil. Mix until a dough forms, then knead on a floured surface for about 10 minutes until smooth. Wrap in plastic and let it rest for 30 minutes.

Prepare the Filling
In a bowl, mix ricotta, gorgonzola, pesto, salt, and pepper until combined.

Roll out the Dough
After resting, roll out the dough into thin sheets. Cut into squares (about 3 inches each).

Fill the Tortellini
Place a small spoonful of filling in the center of each square. Fold the dough over to form a triangle and seal the edges, then bring the two ends together to form a tortellini shape.

Cook the Tortellini
Bring a large pot of salted water to a boil. Cook the tortellini for 3-4 minutes or until they float. Drain and set aside.
Making the Lemon Sauce

Prepare the Sauce
In a saucepan, melt butter over medium heat. Stir in lemon juice, lemon zest, and heavy cream. Season with salt and pepper. Simmer for 5 minutes until slightly thickened.
Plating the Dish

Combine and Serve
Toss the cooked tortellini with the lemon sauce. Serve with fresh rocket on top and sprinkle with Parmesan cheese.
