Make the Crostini
Preheat the oven to 200°C (400°F). Slice the baguette into 1 cm thick slices. Arrange on a baking sheet, brush with olive oil, and sprinkle with salt and pepper. Bake for about 10 minutes or until golden brown and crispy.

Prepare the Beef Tartare
Finely chop the beef tenderloin and place it in a bowl. Add egg yolk, chopped capers, shallots, Dijon mustard, Worcestershire sauce, salt, and pepper. Mix gently until combined. Adjust seasoning to taste.
Preparation of Marinated Chanterelles

Marinate the Chanterelles
In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for 1 minute. Add cleaned chanterelles, season with salt, pepper, and thyme. Sauté for about 5-7 minutes until tender. Remove from heat and drizzle with white wine vinegar. Let marinate for at least 15 minutes.

Assemble the Dish
On each crostini, place a generous spoonful of beef tartare, top with a few marinated chanterelles, and garnish with mâche. Serve immediately.
