Prep octopus
Trim cooked octopus tentacles into bite-sized pieces, about 1.5–2 inches long. Pat very dry with paper towels—moisture will cause oil to splatter and prevent proper crisping.

Marinade
In a bowl combine soy sauce, sake, mirin, grated ginger, grated garlic, kosher salt, and black pepper. Add the octopus pieces and toss to coat. Marinate 10–20 minutes at room temperature (no longer than 30 minutes to avoid overly softening the octopus).

Dredge
Combine all-purpose flour and cornstarch in a shallow bowl or tray and mix until homogeneous. Remove octopus from marinade, letting excess drip off, then lightly dredge each piece in the flour-cornstarch mix, shaking off excess. Place dredged pieces on a rack for 5 minutes to rest; this helps the coating adhere.

Heat oil
Pour neutral oil into a medium pot or deep skillet to a depth of about 2 inches (approximately 2 cups for a small pot). Heat over medium-high heat until oil reaches 350°F (175°C). If you don’t have a thermometer, test by dropping a small pinch of the flour-starch mix—if it sizzles and rises, it’s ready.

Fry
Fry octopus in small batches (3–4 pieces) so the oil temperature stays steady. Fry until golden brown and crisp, about 1.5–2.5 minutes per batch (octopus is already cooked; you’re crisping and warming it). Use a slotted spoon to transfer to a paper towel–lined tray to drain. Keep warm in a low oven (200°F / 95°C) if needed.

Finish
Immediately sprinkle a small pinch of salt over the hot karaage pieces and toss lightly to coat.
Spicy Aioli

In a small bowl whisk together mayonnaise, sriracha, kewpie mayonnaise (if using), lemon juice, sesame oil, grated garlic, salt, and black pepper until smooth. Taste and adjust heat or acidity—add more sriracha for spice or more lemon for brightness. Chill until ready to assemble (at least 10 minutes).

Build tacos: place about 2–3 tablespoons shredded cabbage on each warm tortilla. Arrange 2–3 pieces of hot tako karaage on top of the cabbage. Drizzle 1 tablespoon (or to taste) spicy aioli over the octopus.

Garnish: top with sliced green onions, pickled jalapeño slices, a sprinkle of toasted sesame seeds, and cilantro if using. Serve with lemon or lime wedges for squeezing over the tacos just before eating.

Serve immediately while karaage is hot and crisp. Provide extra spicy aioli on the side.
