Select and chill oysters

Choose 6 fresh, live oysters of medium to large size. Keep them on ice or refrigerated until ready to shuck. They should smell briny and fresh, not fishy.

Shuck oysters

Using a clean oyster knife and a towel or glove for protection, hold the oyster cupped-side down. Insert the knife at the hinge, twist to pop, run the blade under the top shell to sever the muscle, discard the top shell, then run the blade under the oyster to free it from the bottom shell while preserving the liquor. Place each oyster in its half shell on a bed of crushed ice or a chilled tray.

Portion tobiko and garnish

Spoon about ¼ tsp of tobiko onto each oyster. Reserve microgreens or cilantro sprigs and lime wedges for finishing the shooter.

Bloody Mary Shooter Mix

Make the shooter mix

In a cocktail shaker or mixing pitcher, combine 3 cups Hawaii-style Bloody Mary mix with 3 tablespoons shoyu, 1 tablespoon fresh lemon juice, 2 teaspoons prepared horseradish, 1 teaspoon Sriracha, 1 teaspoon Worcestershire sauce, and 1 teaspoon freshly ground black pepper. Stir or briefly shake to combine. Taste and adjust: add more shoyu for saltiness, more Sriracha for heat, or more lemon for brightness.

Chill and strain

Add 1 cup of ice to the shaker, shake or stir for 10–15 seconds until well chilled, then strain the mixture into a chilled pitcher or container so the shooter liquid is cold and free of large ice shards.

Assemble oyster shooters

Place each shucked oyster (in its half shell) into a chilled shot glass or small warmed serving spoon if preferred. Carefully ladle or pour about 2½ tablespoons (roughly 37 ml) of the chilled Bloody Mary–shoyu mix over each oyster so the oyster is partly submerged and the liquor mixes with the shooter liquid. Alternatively, place the oyster in the shot glass and pour the liquid around it so the oyster sits in the mix.

Finish and serve

Top each oyster with the reserved ¼ tsp tobiko, a tiny sprig of microgreen or cilantro if using, and a small squeeze of lime (about ½ teaspoon) or a lime wedge on the rim. Serve immediately while the shooter is cold. Provide a small spoon or instruct guests to tip the shot glass and consume the oyster and liquid together in one or two swallows.
