Noodles & Sauce

Prepare noodles
If using fresh saimin or fresh egg noodles, gently separate and blanch in boiling water 30–60 seconds until pliable but not fully soft. If using dried thin noodles, cook per package to just al dente. Drain well and toss with 1 teaspoon vegetable oil to prevent sticking. Set aside.

Mix sauce
In a small bowl combine soy sauce, oyster sauce, dark soy sauce (if using), sesame oil, sugar, and chicken or dashi broth. Stir until sugar dissolves and set aside.

Prep aromatics and vegetables
Slice spam into small dice (about 1/2-inch). Thinly slice kamaboko. Separate white and green parts of the scallions and slice thinly. Thinly slice the onion, rinse and drain bean sprouts, mince garlic and ginger.

Brown the Spam
Heat a large wok or heavy skillet over medium-high heat until hot. Add 1 tablespoon vegetable oil and swirl. Add diced Spam in a single layer and fry, undisturbed, 2–3 minutes until edges are browned. Toss and continue to brown another 1–2 minutes. Remove Spam to a bowl and reserve.

Cook aromatics and kamaboko
Add remaining 1 tablespoon vegetable oil to the hot wok. Add sliced onion and the white parts of the scallions; stir-fry 1–2 minutes until translucent. Add minced garlic and ginger and stir 20–30 seconds until fragrant. Add kamaboko slices and stir 30–45 seconds to warm and lightly brown at the edges.

Add noodles and sauce
Increase heat to high. Add the drained noodles to the wok and toss to combine with aromatics. Pour the prepared sauce over the noodles and toss or toss-fry (using tongs or spatula) so the sauce evenly coats the noodles. If the mixture looks dry, add 1–2 tablespoons water or broth to help distribute the sauce.

Return Spam and add vegetables
Return the browned Spam to the wok along with the bean sprouts. Toss quickly 1–2 minutes until bean sprouts are heated but still slightly crisp. Taste and season with salt and black pepper as needed.

Finish
Turn off heat. Stir in the green parts of the scallions and drizzle sesame oil. Toss once more to combine.

Garnish and serve
Transfer to a serving platter or plates. Sprinkle toasted sesame seeds and chili flakes or shoyu chili if desired. Serve immediately.
