    Prepare lettuce

    Remove any wilted outer leaves from the romaine. Trim the stem end, then rinse the leaves under cold water. Shake off excess water and spin dry in a salad spinner or pat dry thoroughly with clean kitchen towels or paper towels. Tear or chop the leaves into bite-sized pieces and transfer to a large mixing bowl.

    Add cheese and croutons

    Add 1/3 cup of the shaved/grated Parmesan to the bowl with the lettuce. Add the croutons and toss gently to combine; keep lightly tossed until dressing is ready so croutons remain crisp.

    Season and finish

    When dressing is ready, add the dressing to the lettuce mixture (see dressing steps). Toss briskly but gently to coat leaves evenly. Finish by sprinkling the remaining 1/6 cup (approx. 2 tbsp) Parmesan over the top and crack 1 tsp freshly ground black pepper across the salad. Serve immediately with lemon wedges on the side for optional squeezing.

Creamy Caesar Dressing

    Combine base ingredients

    In a medium bowl, whisk together 1/2 cup mayonnaise and 1/4 cup plain Greek yogurt until smooth.

    Add flavor components

    Stir in 2 tablespoons fresh lemon juice, 2 tablespoons extra-virgin olive oil, the finely minced anchovy fillets (or 1 tsp anchovy paste), 1 minced garlic clove, 1/2 tsp Dijon mustard, and 1/2 tsp Worcestershire sauce. Whisk until fully incorporated.

    Finish and adjust seasoning

    Whisk in 2 tablespoons grated Parmesan and 1/4 tsp salt. Taste the dressing and adjust acidity, salt, or anchovy as needed: add up to 1 tsp more lemon juice for brightness, a pinch more salt for seasoning, or a small extra anchovy/anchovy paste if you prefer a stronger umami note. If the dressing is too thick, whisk in 1–2 teaspoons cold water at a time to reach desired consistency.

    Chill briefly (optional)

    Allow the dressing to rest in the refrigerator for 10–15 minutes to let flavors meld. For immediate use you can proceed right away; if chilling, bring back to cool room temperature for a few minutes and whisk before tossing with the lettuce.
