    Prep the Plantains

    Peel the green plantains and cut them into 1-inch thick slices.

    Fry the Plantains

    Heat the vegetable oil in a deep pan over medium heat. Fry the plantain slices for about 3-4 minutes until they are golden and cooked through. Remove and drain on paper towels.

    Smash and Fry Again

    Using a flat surface, gently smash each fried plantain slice until they are flattened. Return them to the hot oil and fry for an additional 2-3 minutes until crispy. Remove and drain on paper towels, then sprinkle with salt.

For the Cilantro Jalapeño Ranch

    Mix the Ingredients

    In a bowl, combine the mayonnaise, sour cream, chopped cilantro, minced jalapeño, lime juice, garlic powder, and salt. Mix well until smooth.

    Chill the Dressing

    Refrigerate the cilantro jalapeño ranch for at least 30 minutes before serving to let the flavors meld.
