    Prepare the Filling

    In a large skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 1 minute until fragrant.

    Add Vegetables

    Add the chopped mushrooms, carrots, celery, and bell peppers. Cook for about 5-7 minutes until softened.

    Stir in Spinach and Spices

    Add the chopped spinach, garbanzo beans, cumin, salt, and black pepper. Stir well and cook for an additional 3-5 minutes until the spinach is wilted. Remove from heat and let cool.

    Make the Dough

    In a bowl, combine 2 cups of all-purpose flour with a pinch of salt and enough water to form a smooth dough. Knead for about 5 minutes until elastic. Let rest for 30 minutes.

    Assemble Empanadas

    Preheat the oven to 375°F (190°C). Roll out the dough and cut into circles. Place a spoonful of filling in the center, fold the dough over, and crimp the edges to seal.

    Place the empanadas on a lined baking sheet. Brush with a little olive oil and bake for 25-30 minutes or until golden brown.
