    Prepare the Plantains

    Peel the ripe plantains and cut them into slices. In a pot, boil the plantain slices in water for about 10-15 minutes until soft. Drain and mash them in a bowl.

    Mix the Filling

    To the mashed plantains, add cream cheese, brown sugar, cinnamon, and vanilla extract. Mix until well combined and smooth.

    Prepare the Dough

    Use store-bought empanada dough or prepare homemade dough using flour, butter, salt, and water. Roll out the dough and cut into circles.

    Fill and Seal the Empanadas

    Place a spoonful of the plantain and cheese mixture in the center of each dough circle. Fold the dough over and press the edges to seal. You can crimp the edges with a fork to ensure they are well sealed.

    Cook the Empanadas

    Heat oil in a frying pan over medium heat. Fry the empanadas until golden brown and crispy on both sides, about 3-4 minutes per side. Drain on paper towels.
