    Prepare the Marinade

    In a bowl, mix the minced garlic, olive oil, dried oregano, ground cumin, salt, black pepper, and lime juice to create a marinade.

    Marinate the Pork

    Place the pork shoulder in a large dish and pour the marinade over it. Ensure the pork is well-coated. Cover and refrigerate for at least 12 hours, preferably overnight.

    Preheat the Oven

    Preheat your oven to 325°F (163°C).

    Prepare for Roasting

    Place the marinated pork shoulder in a roasting pan. Add bay leaves and sliced onion around the pork.

    Roast the Pork

    Cover the roasting pan with foil and roast in the preheated oven for about 4 hours, or until the meat is tender and easily pulls apart with a fork.

    Finish and Serve

    Remove the foil in the last 30 minutes of roasting to allow the pork to develop a crispy crust. Once done, let it rest for 15 minutes before slicing and serving.
