Pernil Preparation

  1. 1

    Marinate the Pork

In a bowl, combine minced garlic, oregano, cumin, salt, black pepper, and olive oil. Rub this mixture all over the pork shoulder and let it marinate in the refrigerator for at least 4 hours, preferably overnight.

  2. 2

    Slow Roast the Pork

Preheat the oven to 300°F (150°C). Place the marinated pork in a roasting pan and add the pork broth or water. Cover the pan tightly with aluminum foil and roast for about 4-5 hours, or until the pork is tender and can be pulled apart easily.

  3. 3

    Shred the Pork

Once cooked, remove the pork from the oven and let it cool slightly. Use two forks to shred the pork into bite-sized pieces.
