Make the Dough
In a large bowl, combine all-purpose flour and salt. Add the vegan butter and mix until crumbly. Gradually add cold water, one tablespoon at a time, mixing until a dough forms. Knead briefly on a floured surface, then wrap in plastic wrap and refrigerate for 30 minutes.

Prepare the Filling
In a separate bowl, mix together creamy peanut butter and your choice of berry preserve until well combined.

Assemble the Empanadas
Preheat the oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8-inch thickness. Cut into circles (approximately 4 inches in diameter). Place a tablespoon of the peanut butter and berry mixture in the center of each circle. Fold over and pinch the edges to seal.

Bake the Empanadas
Place the empanadas on a parchment-lined baking sheet. Bake for 20-25 minutes or until golden brown. Remove from the oven and let cool slightly before serving.
