    Sauté the Filling

    In a large skillet, heat olive oil over medium heat. Add chopped onion and garlic, and sauté until translucent. Then add the sliced mushrooms and cook until they soften. Stir in the shredded chicken, chopped kalamata olives, salt, black pepper, and paprika. Cook for about 5-7 minutes until heated through. Remove from heat and stir in the chopped parsley. Let the filling cool.

    Prepare the Empanada Dough

    While the filling cools, prepare or buy empanada dough. If making from scratch, combine 3 cups of flour, 1/2 cup of butter, 1 tsp of salt, and 1 egg. Mix until dough forms. Roll out the dough and cut into circular shapes.

    Assemble the Empanadas

    Place a spoonful of the filling in the center of each dough circle. Fold the dough over to create a half-moon shape and crimp the edges to seal.

    Bake or Fry

    For baking, preheat the oven to 375°F (190°C). Place the empanadas on a baking sheet lined with parchment paper, brush with an egg wash, and bake for 25-30 minutes until golden brown. For frying, heat oil in a deep pan and fry the empanadas until golden and crispy, about 3-4 minutes per side.
