Empanada Preparation

    Make the Dough

    In a bowl, combine flour and salt. Cut in butter until mixture resembles coarse crumbs. Stir in beaten egg and cold water until dough forms. Cover and refrigerate for 30 minutes.

    Prepare the Filling

    In a skillet, sauté onion and garlic until soft. Add ground beef, bell pepper, olives, cumin, paprika, salt, and pepper. Cook until the beef is browned. Let it cool.

    Assemble the Empanadas

    Preheat the oven to 375°F (190°C). Roll out the dough and cut into circles. Place filling on one half of each circle, add cheese if desired, and fold over. Seal edges with a fork.

    Bake

    Place empanadas on a baking sheet and brush with egg wash. Bake for 20-25 minutes until golden brown.

    Prepare rice and beans according to package instructions.

    Toss shredded cabbage with a bit of salt and lemon juice to taste.
