Make the Dough
In a large mixing bowl, combine the flour and salt. Cut in the butter until the mixture resembles coarse crumbs. Stir in the egg and gradually add cold water, mixing until a dough forms. Knead gently for a few minutes, wrap in plastic wrap, and refrigerate for at least 30 minutes.

Prepare the Filling
In a medium bowl, combine the grated Asiago cheese, shredded mozzarella, black pepper, and chopped parsley. Mix well and set aside.

Assemble the Empanadas
Preheat your oven to 375°F (190°C). Roll out the chilled dough on a floured surface to about 1/8 inch thick. Cut out circles using a round cutter or a glass. Place a spoonful of cheese filling in the center of each circle. Fold the dough over to create a half-moon shape and seal the edges by pressing with a fork.

Bake the Empanadas
Place the empanadas on a baking sheet lined with parchment paper. Bake in the preheated oven for 20-25 minutes or until golden brown. Let cool slightly before serving.
