Prepare the Maduros
In a skillet, heat 1 tablespoon of olive oil over medium heat. Add the sliced maduros and cook until golden brown on both sides. Remove from the skillet and set aside.

Sauté the Vegetables
In the same skillet, add another tablespoon of olive oil. Add the diced celery, chopped onion, diced red bell pepper, and diced carrot. Sauté for about 5-7 minutes until the vegetables are softened.

Cook the Sausage and Shrimp
Add the sliced sausage to the skillet and cook for 3-4 minutes until browned. Then, add the shrimp, R.E.’s tomato blend, Achiote powder, salt, and black pepper. Cook until the shrimp are pink and cooked through.

Add the Rice
Add the rinsed long-grain rice to the skillet. Stir to combine all ingredients. Pour in 4 cups of water. Bring to a boil, then reduce heat to low, cover, and simmer for about 20 minutes or until the rice is cooked and water is absorbed.
