Prep and season
Place chicken cutlets between two sheets of parchment or plastic wrap and gently pound to even thickness about 1/4 inch. Season both sides with salt and pepper.

Dredge the chicken
Spread flour on a shallow plate. Dredge each chicken cutlet in flour, tapping off excess; set aside.

Toast almonds
In a dry skillet over medium heat, toast sliced almonds until golden and fragrant, 3–5 minutes. Transfer to a plate to cool.

Sear the chicken
Heat olive oil in a large skillet over medium-high heat. Add the floured chicken and sear until golden on the first side, about 2–3 minutes. Flip and cook until just cooked through, 1–2 minutes more. Remove to a warm plate.

Make the sauce base
In the same pan, add minced garlic and sauté 20–30 seconds until fragrant. Deglaze with white wine, scraping up browned bits; simmer until reduced by half.

Add stock and lemon
Stir in chicken stock and lemon juice. Simmer until the sauce thickens slightly, about 4–6 minutes.

Finish with grapes and almonds
Return the chicken to the pan. Add halved white grapes and toasted almonds. Cook 2–3 minutes to warm the grapes and meld flavors, spooning sauce over the cutlets.

Taste and adjust salt and pepper. Sprinkle chopped parsley over the dish. Serve hot with a spoonful of sauce.
