Pears and Woodford Reserve Double Oaked Bourbon Glaze

Prep and preheat
Preheat oven to 400°F (205°C). Wash and dry the pears. Peel, core, and halve them lengthwise. Keep halves intact and set on a baking dish.

Make bourbon glaze
In a medium saucepan over medium heat, whisk together Woodford Reserve Double Oaked, brown sugar, maple syrup, lemon juice, cinnamon, and salt. Bring to a simmer, stirring to dissolve sugar, and reduce for about 4–6 minutes until slightly thickened.

Finish glaze and butter
Remove from heat and whisk in melted butter and vanilla extract until glossy.

Roast pears
Arrange pear halves in the baking dish, cavity side up. Lightly drizzle with a portion of the glaze and add 1/4 cup water to the dish to help keep pears moist.

Bake and baste
Bake for 20–25 minutes, until pears are tender but still hold together. Baste pears with remaining glaze halfway through baking to deepen flavor.

Let pears rest 5 minutes. Plate with roasted pears, spoon more warm glaze over, and serve with 2 scoops of vanilla ice cream.
