Prep and preheat
Thaw puff pastry sheets according to package directions. Preheat the oven to 400°F (200°C). Line a baking sheet with parchment paper.

Whipped citrus butter
In a small bowl, beat together the softened butter, orange zest, orange juice, and a pinch of salt until light and fluffy. Chill for 10-15 minutes to firm slightly.

Roll and cut
On a lightly floured surface, roll the puff pastry sheets into rectangles. Cut each sheet into long triangles suitable for croissant shapes.

Fill with marmalade and butter
Spread a thin line of orange marmalade along the base of each triangle. Pipe or spoon a small line of whipped citrus butter over the marmalade.

Shape croissants
Starting from the base, roll each triangle up toward the tip to form a crescent. Slightly bend into a croissant shape and place, seam-side down, on the prepared baking sheet.

Egg wash
Whisk the egg with the tablespoon of water. Brush the tops of the croissants with the egg wash.

Bake in the preheated oven for 12-14 minutes, until the pastries are deeply golden and puffed.

Remove from oven and brush hot croissants with the melted butter. Let cool slightly on a rack.
