Heat olive oil in a large skillet over medium-high heat until shimmering.

Add beef chunks and sear until browned on all sides, about 3-4 minutes; remove and set aside.
- 3
- 4
Stir in onions and cook until they begin to soften and become translucent, 3-5 minutes.
- 5
Add bell pepper and cook until slightly tender, 2-3 minutes.
- 6
Add minced garlic and cook 30 seconds until fragrant.
- 7
Pour in beef broth to deglaze the pan, scraping up any browned bits.
- 8
Stir in Worcestershire sauce, paprika, salt, and black pepper.
- 9
Return the seared beef to the pan and mix with the vegetables.
- 10
Reduce heat to medium and simmer until the potatoes are just tender and the sauce thickens slightly, about 8-12 minutes.
- 11
Finish with butter, swirl until glossy, adjust seasoning to taste.
