    Prep shrimp

    Dice the shrimp into approximately 1/2 inch pieces and place in a large nonreactive bowl in a single layer.

    Citrus cure the shrimp

    Pour the lime juice and lemon juice over the shrimp until completely submerged. Toss gently to coat and refrigerate for 15–20 minutes, allowing the citrus to 'cook' the shrimp until opaque.

    Chop vegetables

    Finely dice Spanish onion and red and green chili peppers. Set aside.

    Combine seafood with vegetables

    Remove shrimp from the citrus bath, leaving a little juice, and transfer to a clean bowl. Add the onion, chiles, cucumber, and cilantro; toss to combine.

    Add avocado and season

    Gently fold in diced avocado. Season with salt and pepper, and adjust with more lime juice if desired.

    Finish and serve

    Drizzle with olive oil (if using). Spoon the ceviche onto crispy tostadas and serve immediately with extra lime wedges.
