Oaxaca Old Fashioned

    Prep the charred orange plank

    Using a culinary torch or grill, char one orange plank on both sides until deeply amber and aromatic; set aside on a heat-safe surface.

    Measure and combine spirits

    In a mixing glass, pour 60 ml Mezcal (un-aged) followed by 22 ml Alma Tepec Chile-Infused Mezcal.

    Add syrup and bitters

    Add 22 ml Demerara Syrup and 2 dashes Aztec Chocolate Bitters.

    Ice the mixing glass

    Fill the mixing glass with 2 ice cubes.

    Stir until well-chilled

    Stir the mixture for 20-30 seconds until well-chilled and slightly diluted.

    Prepare the serving glass for smoke

    Place the charred orange plank inside a rocks glass to begin imparting smoke and aroma.

    Strain and finish

    Strain the cocktail into the rocks glass over a large ice cube. If desired, cover the glass with the plank and let the smoke infuse for 10-15 seconds.

    Garnish and serve

    Finish with an orange twist garnish, expressing its oils over the drink and placing it on the rim or in the glass.
