Poached Pears in Nonino Grappa Merlot Syrup
Method
Preparation and Poaching
- 1
Prepare pears
Peel the pears, leaving the stems intact. Core from the bottom to create a hollow cavity, taking care not to split the fruit.
- 2
In a medium saucepan, combine Merlot wine, water, granulated sugar, lemon juice, orange zest, ground cinnamon, and vanilla extract. Bring to a gentle simmer over medium heat and stir until the sugar dissolves.
- 3
Stir in the Nonino Grappa Merlot into the simmering syrup and continue to maintain a gentle simmer.
- 4
Submerge the pears in the syrup. Poach over low heat until tender but still firm, about 20–25 minutes, turning pears occasionally to ensure even cooking.
- 5
Carefully remove pears with a slotted spoon and set them aside. Increase heat to medium and simmer the syrup until it reduces to a light glaze, about 8–12 minutes.
- 6
Serve the poached pears warm or at room temperature. Spoon the reduced syrup over the pears. For serving, you can add a scoop of vanilla ice cream or a dollop of whipped cream if desired.
