Poached Pears in Nonino Grappa Merlot Syrup

    Prepare pears

    Peel the pears, leaving the stems intact. Core from the bottom to create a hollow cavity, taking care not to split the fruit.

    In a medium saucepan, combine Merlot wine, water, granulated sugar, lemon juice, orange zest, ground cinnamon, and vanilla extract. Bring to a gentle simmer over medium heat and stir until the sugar dissolves.

    Stir in the Nonino Grappa Merlot into the simmering syrup and continue to maintain a gentle simmer.

    Submerge the pears in the syrup. Poach over low heat until tender but still firm, about 20–25 minutes, turning pears occasionally to ensure even cooking.

    Carefully remove pears with a slotted spoon and set them aside. Increase heat to medium and simmer the syrup until it reduces to a light glaze, about 8–12 minutes.
