    Thaw and Prep

    If using frozen puff pastry, thaw completely in the refrigerator for 40-60 minutes until pliable. Preheat the oven to 200°C (400°F) and line a baking sheet with parchment paper.

    Whipped Citrus Butter

    In a small bowl, beat the unsalted butter with orange zest, orange juice, and a pinch of salt until light and fluffy. Keep this whipped citrus butter soft; you may chill briefly if needed but keep it scoopable for serving.

    Cut and Shape Croissants

    Roll the thawed puff pastry on a lightly floured surface to about 3-4 mm thick. Trim edges if needed and cut into five equal triangles. Starting at the wide base, roll each triangle toward the tip to form a crescent croissant. Place on the parchment-lined sheet with space between each.

    Egg Wash

    Whisk together the large egg and water to create an egg wash. Brush lightly over each croissant to help achieve a shiny, flaky crust.

    Bake

    Bake in the preheated oven for 12-15 minutes, rotating the tray halfway through if needed, until puffed and golden brown.

    Finish and Serve

    While croissants bake, gently warm the orange marmalade if desired. Let croissants rest for 5 minutes after baking. Serve warm with a dollop of whipped citrus butter and a small side of marmalade for dipping or spreading.
