Rinse all produce under cold water. Pat greens dry with a clean towel or use a salad spinner.

Slice cucumber into thin rounds or half-moons.

Julienne or thinly slice the carrots.

Dice the tomato into bite-sized pieces.

Thinly slice shallots.

In a large serving bowl, combine greens, cucumber, carrot, tomato, and shallots. Toss gently to distribute.

Season salad lightly with a pinch of salt and pepper, if desired.

Just before serving, add croutons to the salad and toss lightly to maintain crunch.

Arrange salad on individual plates and place a small dish or pitcher of Green-Apple Vinaigrette on the side. Garnish with chopped parsley if using.
Green-Apple Vinaigrette

Make the vinaigrette
Whisk together green apple juice, apple cider vinegar, Dijon mustard, honey, and salt until well combined.

Slowly drizzle in olive oil in a thin stream while whisking vigorously to emulsify, until the dressing is smooth and slightly thickened.

Taste and adjust seasoning with more honey, salt, or pepper if desired.

Pour vinaigrette into a small serving container for guests to drizzle on the side.
