Preparation

Chill glass
Chill a coupe or rocks glass by placing it in the freezer or filling with ice water for 1–2 minutes.

Set up smoke
Prepare oak-smoke setup for table-side service using a smoking gun or cloche with oak chips.
Cocktail Assembly

Combine base and liqueurs
In a mixing glass, add 2 oz High West Double Rye, 1 oz Aperol, and 0.75 oz Disaronno.

Add amaro and bitters
Add 0.75 oz Amaro and 2 dashes of chocolate bitters.

Ice and chill
Add 1 large ice cube to the mixing glass and stir 30–40 seconds until well chilled and slightly diluted.

Strain & finish
Strain the mixture into the prepared glass over a single large ice cube.
Garnish & Table-side Smoke

Garnish
Garnish with 3 oak-smoked coffee beans placed on the surface.

Table-side aroma
At service, briefly smoke the exterior of the glass with oak smoke using a smoking gun or cloche, then present to the guest.
