Prepare mango
Peel and dice ripe mangoes to measure about 4 cups of flesh; place them in a blender or food processor ready for purée.

Make sugar syrup
In a small saucepan, combine 0.5 cup water and 0.75 cup granulated sugar. Bring to a simmer and stir until the sugar is fully dissolved. Remove from heat and let the syrup cool to room temperature.

Blend base
Add the cooled sugar syrup to the mango flesh in the blender. Add 2 tablespoons fresh lemon juice and 0.25 teaspoon salt. Blend until the mixture is very smooth and evenly pale.

Chill base
Pour the mango mixture into a clean bowl, cover, and refrigerate until cold, at least 2 hours (or overnight for deeper flavor).

Churn and freeze
Churn the chilled mango mixture in an ice cream maker according to the manufacturer's instructions, about 20–25 minutes, until it reaches a soft-serve consistency. Transfer to a freezer-safe container and freeze for at least 2 hours before serving.
