Prepare bananas
Peel the bananas and cut them in half lengthwise, creating two long banana halves per serving.

Plate the ice cream
On two dessert plates, place two scoops of vanilla bean ice cream per plate.

Flambé the bananas
In a small skillet over medium heat, arrange the banana halves and warm for about 1–2 minutes until lightly golden. Add 2 tablespoons brandy and 2 tablespoons dark rum to the pan, then carefully ignite with a long match to flambé. Allow the flames to burn out on their own (about 20 seconds). If flames become too large, cover briefly with a lid to extinguish.

Finish and garnish
Spoon the warm banana flambé over the ice cream on each plate. Top with whipped cream and sprinkle with chocolate chips. Serve immediately.
