    Toast sourdough slices in a skillet with 1/2 tablespoon butter over medium heat until golden and crisp, about 2–3 minutes per side. Set aside on a warm plate.

    In a large skillet, heat 1 tablespoon olive oil over medium heat. Add diced organic breakfast potatoes, season with 0.5 teaspoon salt and 0.25 teaspoon black pepper. Cook, turning occasionally, until browned and tender, 8–10 minutes. Transfer potatoes to a plate.

    In the same skillet, cook 4 slices of smoked bacon over medium heat until crispy. Transfer to paper towels to drain briefly.

    In the same skillet if space allows, add a touch of olive oil and warm the roasted peppers & onions until just heated through, about 2 minutes. Season lightly if needed.

    In a separate pan, melt 1 tablespoon butter over medium heat. Crack in 3 eggs and cook sunny-side up (or to your preferred doneness) for 2–3 minutes, until whites are set and yolks reach desired firmness. Season with a pinch of salt and pepper.

    Mash 1 ripe avocado with a pinch of salt until smooth but still slightly chunky.

    Assemble and finish

    Spread mashed avocado on the toasted sourdough slices. Top with the fried eggs, then scatter the crispy potatoes and warmed peppers & onions over or beside them. Grate or crumble Cotija cheese over the top, drizzle with 2 teaspoons of Sriracha to taste, and lay slices of smoked bacon over the dish. Finish with an extra pinch of salt and pepper if desired.
