BREAKFAST WING PREP AND COOKING

    Preheat the oven to 425°F (220°C). Line a baking sheet with parchment paper.

    Pat the wings dry with paper towels to ensure crispness.

    In a large bowl, toss the wings with olive oil, smoked paprika, garlic powder, onion powder, kosher salt, black pepper, and cayenne pepper until evenly coated.

    Arrange the wings in a single layer on the prepared baking sheet. Bake for 25–30 minutes, flipping halfway through, until the skin is crisp and juices run clear.

    Meanwhile, prepare the glaze. In a small saucepan over low heat, melt butter. Whisk in maple syrup, hot sauce, and apple cider vinegar until glossy.

    With about 8 minutes of cooking time remaining, brush the wings with the glaze and return to the oven to finish cooking (6–8 more minutes).

    Blue Cheese Dip: In a bowl, combine blue cheese crumbles, sour cream, and mayonnaise. Stir until slightly chunky. If too thick, add milk a teaspoon at a time until desired consistency. Season with black pepper to taste.

    Ranch Dip (optional): In another bowl, whisk together mayonnaise, sour cream, buttermilk, and dried ranch seasoning until smooth. Stir in fresh chives if using. Adjust thickness with more buttermilk or mayo.

    To serve: Plate the wings with a bowl of blue cheese dip and a bowl of ranch dip (optional). Garnish with chives or green onions if desired.
