    Whipped citrus butter

    Place softened unsalted butter in a bowl. Add orange zest, lemon zest, a pinch of salt, and powdered sugar if using. Whip with a fork or spatula until completely fluffy and well combined. Set aside at room temperature to soften slightly for spreading.

    Prepare French toast batter

    In a shallow dish, whisk together eggs, milk, ground cinnamon, vanilla extract, and 0.25 tsp salt until fully combined.

    Dip and cook French toast

    Dip each slice of bread into the egg mixture, allowing it to soak briefly (10–15 seconds per side). Heat a skillet over medium heat and melt 1 tablespoon of butter. Cook the soaked bread slices until golden and crisp on each side, about 2–3 minutes per side. Keep warm as needed.

    Roast breakfast potatoes

    Preheat oven to 425°F (220°C). Toss diced potatoes with olive oil, salt, pepper, paprika, and garlic powder. Spread on a sheet pan in a single layer and roast 25–30 minutes, flipping halfway, until edges are golden and potatoes are tender.

    Cook bacon

    Place bacon slices in a cold skillet and cook over medium heat until crisp, about 6–8 minutes. Transfer to a paper-towel-lined plate to drain excess fat.

    Cook Kielbasa

    If using Kielbasa, slice into 1/4-inch rounds and sauté in a skillet over medium heat until browned and hot through, about 4–6 minutes. Keep warm with bacon if desired.

    Two eggs your way

    Prepare two eggs any style per preference. For sunny-side up: heat a small nonstick skillet, add a small amount of butter, crack the two eggs into the pan, and cook until the whites are set and the yolks reach your desired level of doneness (about 2–3 minutes for runny yolks). For over-easy: cook 1–2 minutes, then flip and cook another 30 seconds to 1 minute.

    Assemble and serve

    Plate two slices of French toast, top with whipped citrus butter, and drizzle with real maple syrup. Add the two eggs your way on the side, and serve with breakfast potatoes and either crispy bacon or Kielbasa sausage. Garnish with any fresh herbs if desired.
