    Toast the bread

    Preheat the oven to 375°F (190°C). Slice the baguette into rounds about 1/2 inch thick. Brush both sides lightly with olive oil and arrange on a baking sheet. Bake until golden and crisp, 8–10 minutes, flipping once midway.

    Make the tomato-olive relish

    In a bowl, combine the diced tomatoes, chopped olives, and minced garlic. Add aged balsamic vinegar and season with salt and pepper. Toss to combine and let sit 10–15 minutes to meld flavors.

    Incorporate basil

    Gently fold torn fresh basil leaves into the tomato-olive mixture. Taste and adjust salt if needed.

    Assemble bruschetta

    Spread a generous spoonful of the tomato-olive relish onto each toasted bread slice. Top with crumbled feta cheese.

    Finish and serve

    Drizzle a light amount of additional aged balsamic over the tops, finish with a light drizzle of extra-virgin olive oil if desired, and garnish with extra basil leaves.
