    Halved recipe: This Classic Caesar Salad is prepared for 2 servings. Prepare all ingredients before assembly.

    Prep the greens and croutons

    Rinse, dry, and tear 0.5 head of romaine into bite-size pieces and place in a large mixing bowl. If using homemade croutons, toss ~0.5 cup bread cubes with a pinch of salt and toast in a 350°F (175°C) oven until golden.

    Make the dressing (emulsified caesar)

    In a small bowl, mash 1 anchovy fillet with 0.5 clove garlic until smooth. Whisk in 0.5 yolk, 1 tablespoon fresh lemon juice, 0.25 teaspoon Dijon mustard, 0.25 teaspoon Worcestershire sauce, a pinch of salt and 0.125 teaspoon black pepper. Slowly drizzle in 4 tablespoons extra-virgin olive oil while whisking vigorously until the dressing thickens and emulsifies. Fold in 2 tablespoons grated Parmesan for dressing.

    Combine and finish

    Add the dressing to the romaine and toss to coat evenly. Add 0.5 cup croutons and 1 tablespoon shaved Parmesan; toss briefly. Taste and adjust salt and pepper as needed. Serve immediately.
