    Chill Glasses and Prep Garnish

    Place two highball glasses in the freezer or fill with ice to chill. Fill each glass with about 2 cups of ice and set aside two rosemary sprigs for garnish.

    Prepare Berry-Citrus Base

    In a small mixing glass, combine raspberry purée (60 ml) and fresh lemon juice (15 ml). Muddle gently to break the purée and release brightness.

    Incorporate Aperitif

    Add the non-alcoholic bitter aperitif (120 ml) to the berry-citrus base. Stir well to blend flavors.

    Assemble Drinks

    Distribute the ice evenly between the two prepared highball glasses. Strain or pour the berry-aperitif mixture into the glasses over the ice.

    Top with Soda and Garnish

    Top each drink with grapefruit soda (about 240 ml per glass). Gently stir to combine. Garnish with a rosemary sprig and, if desired, a lemon twist.

    Serve immediately while cold for a bright, citrus-forward mocktail.
