Method

  1. 1

Butter four ramekins and dust inside with cocoa powder; tap out any excess.

  2. 2

Place the semisweet chocolate chips and the butter in a heatproof bowl. Melt together over simmering water or in the microwave, stirring until smooth.

  3. 3

Stir the granulated sugar into the melted chocolate until fully combined and glossy.

  4. 4

Whisk in the eggs and egg yolks until the mixture is thick and homogeneous.

  5. 5

Stir in vanilla extract and salt until evenly distributed.

  6. 6

Gently fold in the all-purpose flour until just combined; avoid overmixing to keep the centers fudgy.

  7. 7

Divide batter evenly among the prepared ramekins, filling about 3/4 full.

  8. 8

Bake at 425°F (220°C) for 12-14 minutes. The edges should be set while the centers remain slightly soft and lava-like.

  9. 9

Let Cakes rest 1-2 minutes, then run a knife around the edges and invert onto plates. Serve immediately with whipped cream and a scoop of salted caramel ice cream.
