    Brown the beef

    In a large heavy-bottomed pot over medium-high heat, add the ground beef. Cook, breaking it up with a spoon, until browned and no longer pink, about 6-8 minutes. If there is excess fat, tilt the pot and spoon it off.

    Sauté aromatics

    Add the chopped onion and diced green bell pepper to the pot. Cook, stirring occasionally, until the vegetables are tender and translucent, about 5-7 minutes. Stir in the minced garlic and cook for 30 seconds until fragrant.

    Bloom spices

    Sprinkle chili powder, ground cumin, smoked paprika, cayenne pepper, salt, and black pepper over the meat and vegetables. Stir and cook for 1 minute to release the spices' aromas.

    Add tomatoes and broth

    Stir in the crushed tomatoes, tomato sauce, and beef broth. Bring the mixture to a simmer.

    Add beans

    Add the drained kidney beans to the pot. Stir to combine.

    Reduce heat to a gentle simmer and cook, uncovered, for 25-30 minutes, stirring occasionally, until the chili thickens and flavors meld.

    Adjust heat and finish

    Taste and adjust seasoning with additional salt or cayenne if you prefer more heat. If using, stir in minced chipotle peppers in adobo sauce.
