Prepare tortillas
Cut the tortillas into wedges (about 6-8 per tortilla). In a wide skillet, heat 3 tablespoons oil over medium heat. Fry the wedges in batches just until they’re lightly crisp on the edges, about 1–2 minutes per side. Drain on paper towels.

Coat tortillas with green sauce
In the same skillet used for frying, pour in the green chili sauce. Add the fried tortilla wedges and toss gently to coat. Simmer for about 5–7 minutes, allowing the chips to soften and absorb some sauce without turning mushy.

Assemble and garnish
To serve, mound saucy chips on plates. Top each portion with an egg, then scatter shredded lettuce and diced tomato. Add a dollop of sour cream and sprinkle crumbled feta on top. Serve immediately, with extra sauce on the side if desired.
