Method

Prep & toast bread

    Preheat a grill, grill pan, or broiler to medium-high heat.

    Slice the French baguette on a diagonal into 1/2-inch thick slices (about 20 slices from 1 baguette).

    Brush both sides of each slice with olive oil.

    Toast slices on the grill or under the broiler until golden and crisp, about 2–3 minutes per side. Remove and set aside.

Prepare toppings

    Slice fresh figs into quarters or thin wedges.

    Cut Cambozola Bleu cheese into small chunks or thin slices suitable for topping.

    Thinly slice the red onion.

Assemble

    Place a small slice of prosciutto on each toasted bread slice.

    Top with a few fig pieces and a small amount of Cambozola.

Finish & garnish

    Drizzle each bruschetta with a line of aged balsamic reduction.

    Sprinkle the red onion slices, fresh herbs, and micro greens over the top.

    Season lightly with salt and freshly ground black pepper to taste.
