    Toast the sourdough bread slices until lightly golden and set aside.

    In a skillet, heat 1 tablespoon olive oil. Add shredded potatoes and season with 0.5 teaspoon salt and 0.25 teaspoon pepper. Cook, stirring, until crisp and browned, about 6-8 minutes.

    In the same or a second skillet, cook maple-bacon slices over medium heat until crisp. Transfer to paper towels to drain.

    In a separate pan, fry the eggs over-easy until whites are set and yolks are still runny.

    Place cheddar cheese slices on the bottom sourdough slice to melt slightly.

    To assemble: layer crispy potatoes on the cheddar, then add maple-bacon, avocado slices, and tomato slices. Top with the fried egg and finish with the second sourdough slice.

    In a large bowl, combine mixed greens, cherry tomatoes, cucumber, and red onion. Toss gently to distribute.

    In a small bowl, whisk together apple cider vinegar, olive oil, Dijon mustard, honey, and salt and pepper to create the apple vinaigrette.

    Drizzle dressing over the salad and toss to coat. Adjust seasoning if needed.
