Crisp the wonton chips
Preheat the oven to 350°F (175°C). Spread the wonton chips in a single layer on a baking sheet and bake 5-7 minutes, turning once, until crisp and lightly golden. Let cool slightly before using as a base for the nachos.

Prepare tuna tartare
In a medium bowl, gently combine the diced ahi tuna with soy sauce (1 tablespoon), sesame oil (1 teaspoon), fresh lime juice (1 tablespoon), and finely chopped green onions (2 tablespoons). Chill for 15 minutes to let the flavors meld.

Make wasabi crema
In a small bowl, whisk together mayonnaise (3 tablespoons) and wasabi paste (1 teaspoon) until smooth. Refrigerate until ready to serve.

Make sriracha crema
In another bowl, whisk sour cream (3 tablespoons) with Sriracha (1 tablespoon) until evenly colored. Adjust heat to taste.

Assemble and finish
On a large platter, spread crisp wonton chips as a base. Top with small mounds of tuna tartare, then scatter avocado and jalapeño slices. Drizzle with wasabi crema and sriracha crema. Sprinkle sesame seeds over the top. Serve immediately.
