1. Prepare tuna mixture
Dice the ahi tuna into small 1/2-inch cubes and place in a mixing bowl. Add minced shallots, grated ginger, and sliced green onions. Fold in diced avocado, Ponzu sauce, and Cajun Remoulade. Season with salt and pepper to taste. Gently mix but keep some texture. If the avocado is very soft, fold carefully to avoid mashing.
2. Form patties
Lightly mix the tuna-vegetable mixture just until combined. Divide into two equal portions and gently shape into two compact patties about 3/4 inch thick. Do not overwork the mixture to keep the center tender and pink.
3. Toast buns
Spread butter on the cut sides of brioche buns. In a skillet over medium heat, toast the buns until golden brown and lightly crisp, about 1-2 minutes per side. Remove and keep warm.
