Crostini base

    Toast crostini

    Preheat oven to 375°F (190°C). Slice bread into four crostini pieces. Brush lightly with olive oil and sprinkle with a pinch of salt. Arrange on a baking sheet and toast 6–8 minutes, flipping halfway, until golden and crisp.

Whipped cheese

    Whip cheese

    In a small bowl, beat 1/2 cup cream cheese with 2 tablespoons heavy cream, 1 teaspoon lemon juice, 1/4 teaspoon salt, and 1/4 teaspoon black pepper until light and fluffy.

Parsley mouseline

    Make parsley mouseline

    In a separate bowl, whisk 1/2 cup cream cheese with 1 tablespoon heavy cream until smooth. Fold in 2 tablespoons chopped parsley and 1 teaspoon lemon zest. Add 1/4 teaspoon salt and mix to a light, airy mousse.

Assembly

    Assemble

    Spread a thin layer of whipped cheese on each crostini. Top with a slice of smoked salmon.

    Finish and serve

    Dollop a small amount of parsley mouseline on top of the salmon. Scatter capers over the tops and garnish with parsley leaves. Serve immediately.
